Cooking with Gladewaves: Red Beans and Rice

Welcome to Cooking with Gladewaves, where we make yummy dishes using items that can be found in our Big Red Box pantries.


It’s Monday in New Orleans and that means red beans and rice. Dried beans and rice are a staple in our pantries.




Ingredients from the pantry:

1 pound red beans

1 bag white rice

1 can Spam, chopped


Other ingredients:

1 onion, diced

1 bell pepper, diced

3 stalks of celery, chopped

3 cloves of garlic, finely chopped

2 tablespoons bouillon


Soak red beans over night until tender.


Coat bottom of pot with cooking oil and sauté onions until clear. Add bell pepper, celery, and garlic and sauté until tender. Add the chopped Spam and continue sautéing.


In a measuring cup, add 2 table spoons of bouillon of two cups water. Stir until completely mixed to make a stock.


Drain the beans and add to pot with the bouillon, season to taste and let simmer for an hour, but the longer the better. Add more stock as needed.


Serve over cooked rice and enjoy!
